Bentonite is a gray, clay granule that is used in wines as a clarifier. It possesses a negative electrostatic charge. This attracting charge along with hydrogen bonding causes suspended particles in the wine to cling to it as it settles to the bottom of the container. Most kit wines add it at the beginning of the fermentation process. If used post-fermentation, allow several weeks to settle out of the wine. Dont let the gray clay scare you. Bentonite is quite healthy and contains numerous minerals including calcium, magnesium, silica, sodium, copper, iron, and potassium. Health advocates recommend bentonite to help remove toxins.

Used for clearing hazes from wine. Use 4 teaspoons (approx 1 oz) to 1 cup warm water. Do not stir and allow to sit approximately 6-8 hrs. Bentonite should smooth and can be added directly to the wine. Bentonite is a good alternative for people who have shellfish allergies since many other fining agents are derived from fish swimbladders.
